Nothing is added that nature did not intend.

In Kyoto, the highest form of culinary mastery is restraint. We do not disguise ingredients with heavy sauces; we listen to the season's pulse through water, fire, and timber.

01 • MIZU (水)

Kyoto Deep Aquifer Water

Drawn daily from our private 80-meter well in Gion. Exceptionally soft, ultra-pure water with low mineral hardness creates the transparent foundation for our 3-year Rishiri Kombu dashi.

02 • HO (火)

Kishu Binchotan Charcoal

Harvested from 30-year-old Ubame oak in Wakayama. Burning at over 1,000°C with near-zero smoke, radiating pure far-infrared heat that locks moisture into fatty cuts in seconds.

03 • MOKU (木)

Yoshino Hinoki Sanctuary

Our 8-seat counter is smoothed with water stones and finished without lacquer. The natural cedar aroma purifies the air and grounds the senses before the first vessel is served.

04 • SHUN (旬)

The 24 Micro-Seasons

We do not change our menu four times a year. We adapt weekly according to the ancient *24 Sekki* calendar, harvesting ingredients at the exact 5-day pinnacle of flavor.
